The recipe for the Stuffed bell peppers I made

When I posted my Stuffed bell peppers post gmom asked me to post the recipe, so here it comes:

4 portions

1 chopped onion
2 tablespoons of olive oil
400 g minced lamb
1 dl  tomato puree
4 dl bulgur
6-8 dl water
4 bell peppers

Preheat the oven to 200 degrees Celsius.
Heat the olive oil in a saute pan. Add the onion and stir until they are soft.
Add the lamb and cook until it’s browned. Add the tomato pure and salt and pepper. Add the bulgur and the water and cook for 10 minutes. Add more water if it gets too dry.
Remove the top of the bell pepper and take all the seeds out.
Stuff the peppers with the lamb and bulgur stuffing and place in a baking dish. If you have too much stuffing just put it in a baking dish and serve on the side or add more bell peppers.
Bake for 10 minutes. The bell peppers will still be a bit crisp, but we really like it that way.

 Dinner: Stuffed bell peppers (lamb mince, onion, tomato puree and bulgur) served with arugula and grapes with a thyme sauce (quark, creme fraiche and thyme).

Most of the recipes of the food that I have posted so far are from the Swedish cookbook “Klaras goda GI-dagar” by Klara Desser & Hans Desser. I use it for inspiration, so I don’t always follow the recipes 100%.

    Lovely thank you! It’s stuffed red peppers with lamb for dinner this week. I see there are no spices…salt pepper…maybe curry or cumin?

  2. Wow, those look great. I do stuffed peppers different ways, but have never tried lamb.
