Day 1 of Zwem4daagse

I woke up after 8 hours of sleep, this week there is no school, so my daughter woke me.

Breakfast: Yogurt, banana, cinnamon and shredded coconut with a cup of white tea.Breakfast: Yogurt, banana, cinnamon and shredded coconut with a cup of white tea.

Lunch: Watercress, celery, carrot, cherry tomatoes, boiled egg, pumpkin seeds, red onion, smoked salmon, lemon juice and extra virgin olive oil. This salad was the best one I have had in a long time. I think it’s my favourite salad from now on. The lemon juice made the watercress less bitter.Lunch: Watercress, celery, carrot, cherry tomatoes, egg, pumpkin seeds, red onion, smoked salmon, lemon juice and extra virgin olive oil.

When my husband came home we went to the swimming pool for Zwem4daagse.
That’s swimming 4 nights in the same week. My daughter and husband participated.
My husband needs to swim 500 meters per night and my daughter needs to swim 250 meters per night. On Friday they get medals.

Dinner: Napa cabbage with Bolognese sauce (onion, red onion, garlic, carrot, celery, minced meat, tomato paste and diced tomatoes) topped with Parmesan cheese.
